Each menu option reveals an innovative, flavorful realization of a classic Japanese dish — shrimp tempura is topped with almonds; salmon teriyaki joins the usual chicken and beef; and the Kobe beef carpaccio is flavored with wasabi dressing and Asian pears.
Raw also designs its own sushi creations. Try the salmon hako, consisting of salmon, eel, avocado and plum sauce in a bamboo frame, or the kingdom of eel roll, in which your standard California roll is wrapped in eel and drizzled with eel sauce.
The sake menu is no less creative or impressive. An extensive selection of the rice-based libation is imported from Japan, with more than 30 varieties of dry, smooth, floral and aromatic sakes available in both economy and top-shelf price ranges.
