For example: seared scallops, with bacon, wasabi apple sauce and soy brown butter; Spanish-style steak tartare; grilled swordfish with butternut squash hummus, Moroccan carrots and a lime yogurt sauce; and a pan-seared duck breast with a moo shu duck pancake and orange-hoisin sauce.
